dense and meaty (a touch dry?), this sweet and mild trout tastes first and foremost of smoke---calling for strong, complementary flavors (here the acidic zip of capers and the bright crunch of red onion)
at the price of slight dryness, this is one of the better macronutritional deals on trout: 20g protein, 7g fat, and 0g carbs in 140kcal
better tins will usually have more fat in the fish itself
