“my dearest edwina, i have come into possession of four large whelks”

Galician clams

Made by Don Gastronom

white clams (Venerupis corrugata) in brine. what could be happening here?

these sold for a whopping $28 a tin at Black Sheep, which is only a dollar more than they go for at Rainbow Tomatoes Garden. i was reluctant to pay so much for a single tin, but then Black Sheep was closing up and selling things at half price... at $14, i sprung for it.

i am deeply saddened to report that these are fantastic. good clam flavor, no grit, beautifully handled. the brine sang in my michelob, rich with clam flavor but not overly salty. it brings me no pleasure to say that a tin of these gently handled, beautifully intact bivalves is probably worth $28. and $28 is hardly too much to pay---for the confidence of having such a tin buried in the proverbial sand of your pantry shelves, ready for your crustaceous needs at a moment's notice. i only wish i bought the other two tins...
